Fancy Free

With over 50 years industry experience between them, Rob Libecans, Chris Hysted-Adams, Matthew Stirling and Ryan Noreiks are excited to announce the opening of their new bar, ‘Fancy Free’ in the Melbourne CBD later this year. 

The concept behind Fancy Free is simple – a place where everything is delicious, and everyone is welcome. Once open Fancy Free will be your favourite neighbourhood bar, in the middle of the CBD where cocktails, wine, beer and food will each have a special place etched out for them.

“We have been working towards this point since we met. It’s always been our dream to open a bar and now the time is right for all of us to do it together. Kind of like the Avengers, but with drinks” – Chris Hysted-Adams.

While all meeting at Black Pearl, it’s been some time since the four have worked together. Stirling (Cookie, Joe’s) and Hysted-Adams (former Ketel One and Diageo World Class Brand Ambassador) have been at the helm of Black Pearl, helping guide the cocktail institution to great international success. Most recently, taking out Best International Cocktail Bar at the prestigious New Orleans’ Spirited Awards. Libecans was a driving force at groundbreaking London venue White Lyan (Spirited Awards, World’s Best New Bar 2014) before taking on a trade advocacy role with Bacardi in the UK. After immersing himself in the Chinese hospitality industry for 2 years, Noreiks headed up the Lark in Brisbane for 5 years and can now be found working his magic at Melbourne cocktail haven, Romeo Lane. 

Before launching the new bar, the team will be showcasing their skills over the next two months at teaser events across the country, with collaborators at Dark Mofo (TAS), Mary’s (SYD), Saville Row (QLD), and Ramblr (VIC). The team have hundreds of ideas and concepts for the new bar and will be showcasing some of their favourites during these collaborations.

In addition to these new ventures, the team have also established a drinks agency, ‘Seven Ounces’, which focuses on corporate events, creative activation solutions and drinks consultancy.
